2 cups fresh whey ricotta, drained to the texture you like
1/2-1 c sifted confectioners sugar (to taste, I like mine a little less sweet)
1 tsp vanilla extract
1-2 cups mini (or finely chopped) chocolate chips
zest of 1/2 lemon or lime
waffle cone, belvita, graham crackers for dipping

Place all ingredients except chocolate chips in a bowl and stir till well combined.
Fold in chocolate chips. Transfer to serving bowl.
Chill for an hour (or not). Serve with waffle cone, belvita, etc for dipping. Enjoy!
